Calabacita con Puerco (Mexican style squash with pork) 2lbs pork shoulder (trimmed) 4-5 calabacita squash chopped 5 Roma tomatoes chopped 1 onion chopped 1 can rotel tomatoes with chili 1 bag frozen corn Garlic Chicken stock 1 cup Bay leaves Salt and Pepper to taste Chili quick powder 2tbsp Brown pork with the onion Once cooked add rotel-do not drain Add calabacita & tomato Add Garlic, salt and pepper, chili quick & chicken stock bring to boil Simmer for 20-30 minutes. Serve with rice.
