Chris x CHICKEN FRANCESE | Serves 4 INGREDIENTS ➡️CHICKEN 2x 250g/9oz Chicken Breasts, close to room temp 35g / 1/4 cup Plain Flour 3/4 tsp Salt 1/2 tsp EACH: Black Pepper, Garlic Powder 2 Eggs, beaten 20g / 1/4 cup Parmesan (I use the refrigerated dusty stuff) 1 1/2 tbsp Olive Oil 1 tbsp/15g Unsalted Butter ➡️SAUCE 1 large Lemon, slice 4 thin rings from the centre then squeeze 1 tbsp juice from the ends 60ml / 1/4 cup Dry White Wine 180ml / 3/4 cup Chicken Stock 4 tbsp/60g Unsalted Butter, diced into small cubes (keep in the fridge until needed) 2 tbsp finely diced Fresh Chives METHOD 1️⃣Take two large shallow dishes. In the 1st combine flour & seasoning and in the 2nd whisk the eggs & parmesan. Horizontally slice each chicken breast through the centre to create 4 even-sized breasts. Individually coat in the flour. 2️⃣Add 1 1/2 tbsp oil & 1 tbsp butter to a large non-stick pan over medium-high heat. Place the bowl with the egg next to the pan, then one by one coat the chicken in the egg, allow excess to drip off, then place in the pan. Cook each side for around 3mins, or until golden on the outside & just about cooked through the centre. Remove & place on a plate to one side. Add the lemon slices to the pan & fry for ~20 secs each side, just until they start to soften/lightly colour. Remove to one side (don’t rest on the chicken). 3️⃣Pour in wine & rapid simmer for ~2mins, or until it has mostly evaporated, deglazing the pan as needed. Pour in stock & 1 tbsp lemon juice (can adjust this later) & bring to a simmer. 4️⃣Add the cubed butter to the leftover flour & toss coat. Add to the pan & swiftly whisk until it blends into the stock. Add chives & continue simmering & stirring until the sauce turns cloudy & thickens to a glossy texture. I just cubed up some boneless skinless chicken breasts, right? Cubed up. I'm going to cut them up real small like that as you see into some hot oil. Let's get that up in there. This is like three chicken breasts. You can use as many as you want. You'll see why later. Now we're going to do is we're going to go ahead and fully cook these. We are going to add just there's a lot of stuff going on here so you gotta pay attention here. We're going to season the chicken. We got black pepper going to go in. And we got a little bit of salt. Okay. So once you get your chicken fully cooked as you see set it off to the side. We're going to use the same pan. I've added just a little bit more oil. Just very little mix. There's still some in there. And I chop of bell pepper alright red bell pepper and then I got fresh garlic clove couple of those in there chopped up and then some onion get that in there now a couple minutes we're going to go ahead and soften this up alright once we got them starting to soften up we're going to grab some pineapple chunks 100% pineapple juice in there but I drain that out so you're just using the chunks get that in alright and then we're going to let this be in here for about two three minutes here and heat them up alright two, three minutes later, this the pineapple's starting to soften up. We got some fresh ginger that I grated up, right? We'll get that in there and then, we're going to go with just a little bit of soy sauce. Alright, get that in there. We're going to go grab 1 cup, right? Of jasmine rice. Get that in there and now, we're going to end it out with two cups of chicken broth. Now, we're going to do is at mid medium heat low heat. We're going to bring this to a boil. Once it's boiling, we're going to drop it to low and cover it for an additional 15 to 18 minutes and allow that rice to cook. Alright, so I've had it at a simmer for about 18 minutes. As you can see, it absorb most of that broth. That's what you want. We're going to bring back in that chicken because we need to just warm it back up now, alright? And we're going to get that mixed in. Okay. So once we have it all warmed up, the chicken back warmed up, right? We're going to garnish it with two things. Some green onion that we chopped up. Get those on there. And we're going to end it with some sesame seeds. And would you look at that right there. Pineapple and chicken rice. Hm. Look at this. It smells so good with pineapples. I mean that did it for me alone. Let alone all the other good fixings in there. Right? Look at that. Easy meal. Super easy. With jasmine rice. Man. Here we go. Smells delish. Get some of that chicken right there. And you could season up the chicken in with other stuff. But you remember all the stuff you've seen in this. So it's got all the flavor you need. Bon appetit. To start we're going to take two large chicken breasts and slice them up. Two chicken breast is perfect for this recipe. Now I'm going to slice these and then go ahead and cube them. Just like this. You want to make this into smaller pieces. It'll be faster to cook. Now this chicken recipe is delicious. You have no idea how tasty it is. And honestly it just takes a few minutes. Alright once you've cut up your chicken go ahead and add those pieces to a larger bowl for seasoning just like this. Now I'm going to start with some eggs. I've got three eggs here. I'm also going to add a tablespoon of black pepper. A spoonful of paprika, and a spoonful of salt. We're also going to add two tablespoons of mayonnaise. And now just mix everything together very well. And this is going to be a delicious seasoning for our chicken. This recipe is honestly so quick and it is super flavorful. Alright at this point we're going to add half a cup of flour. Mix everything together again. And you can just see how simple and easy this is. And this is a texture we're looking for. We're now going to add 100 grams of grated mozzarella cheese. I'm going to add some parsley for some flavor and colour. And now we're going to be adding a tablespoon of roasted garlic. Let's mix everything together again. And that's it. Our seasoned chicken mixture is ready. And honestly in just a few minutes you've prepared a deliciously seasoned chicken. Alright now we're going to go ahead and fry this chicken in a pan. I've got a pan here with some oil that's been heated up. And now we're going to add those chicken pieces right on top of the oil. Now you can go and turn your heat onto medium. Add as many pieces of chicken as you'd like and arrange them in the pan just like this. I'm going to fry the chicken in larger pieces as you can see here. Fry on one side and then we're going to flip them over to fry the other side. And after a few minutes they are nice and cooked. Our chicken is crispy and super tasty and honestly my mouth is watering. Alright let's let the other side cook. This is looking so good already. Alright and just after a few minutes, our chicken is ready. Go ahead and remove that from the pan and serve on a plate. And now we're going to finish the rest of the recipe. Just going to fry up the rest of that chicken. And just like that it's ready. Our seasoned chicken is perfect. Perfect recipe with spices, chicken and cheese. Let's give it a try. Start by slicing chicken breasts in half and pound them to tender them and reduce cooking time. Toss into a bowl and coat with seasoned flour salt and pepper. Sauce : I doubled this recipe so I have enough sauce to serve with rice . 2. 1 tbsp butter 3. 1 tablespoon fresh garlic 4. 1 tablespoon ginger 5. 1/2 cup soy sauce 6. 1/4 cup Bourbon, OPTIONAL 7. 1/2 cup hoisin sauce 8. 1/4 cup dark brown sugar DO NOT ADD SALT - SOY SAUCE is very salty. 1.
