In a saucepan, combine heavy cream, sugar, and chopped dark chocolate. 2. Sprinkle agar agar or gelatin over the mixture. 3. Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring constantly for about 3 minutes until the chocolate is melted and the agar agar or gelatin is fully dissolved. 4. Once the mixture is smooth and well combined, remove it from the heat. 5. Lightly oil a bowl or individual serving molds. 6. Pour the chocolate mixture into the prepared bowl or molds. 7. Tap the bowl or molds gently on the counter to remove any air bubbles. 8. Place the panna cotta in the refrigerator to chill for at least 4 hours, or until set. 9. Once set, carefully unmold the panna cotta onto serving plates if using molds. 10.
