We've been inspired by the classic US holiday favourite - the pumpkin pie. Our version is a super easy pudding. Fresh out of the oven, it looks just like a soufflé! Pumpkin flesh is loaded with vitamin A for an immune system boost. Serve with a dollop of full fat, organic crème fraiche and feel free to drizzle with raw honey if you like things sweeter.
Beetroot Spaghetti with Brazil Nut Pesto and Goats’ Cheese | HEMSLEY + HEMSLEY - healthy food and living
One of our favourite combinations, this recipe pairs spaghetti-style beetroot with creamy goat's cheese and fresh pesto. A wonderful dish for a summer or autumn evening, this 'spaghetti' is healthy, satisfying and full of flavour!
Baobab ‘Green eggs’ and ‘Egg nog’ Smoothies | HEMSLEY + HEMSLEY - healthy food and living
It’s fuelling - but light on the stomach - and the raw egg yolks make it very easy to digest. Add a small, ripe banana and you have a post workout recovery and an amazing hangover cure! Turn the ‘egg nog’ into ‘green eggs’ (an idea we’ve borrowed from the Dr Seuss classic ‘Green Eggs and Ham’) by throwing in some alkalising green leaves.
Beef Stew | HEMSLEY + HEMSLEY - healthy food and living
There is nothing better than a bowl of nourishing comfort food, and here is one of our all-time winners. Just take a cheap cut of meat such as shin or oxtail, add some water and chunky veg and slow cook it for a delicious and highly nutritious meal. The simmered bones provide a real stock full of richness, essential fats and minerals, and slow cooking makes the meat succulent.
Quinoa Scones & Strawberry Chia Jam | HEMSLEY + HEMSLEY - healthy food and living
This is one of our favourite ways to "jam" as it's low in sugar, fuss-free and ready to eat - plus you get to enjoy all the raw goodness of delicious seasonal fruits. We've turned a classic Middle Eastern tabbouleh into a gluten-free delight that will have most dinner guests (and children) fooled! The rich flavours of lamb work well with the zesty salad but beef is good too. You can even swap the meatballs for grilled halloumi. This is a whole new way to enjoy cauliflower! Muffin Frittatas | HEMSLEY + HEMSLEY - healthy food and living
These tasty vegetable muffins make great packed lunches, on the go breakfasts or picnic meals. The Italian word ‘frittata’ derives from fritto, to fry, and most frittata recipes call for you to fry the vegetables first, but we skip that step in these to make the process quicker. Eggs are one of the only foods that contain naturally-occurring vitamin D - something that we in Britain are usually lacking!
Cottage Pie with Cauliflower mash | HEMSLEY + HEMSLEY - healthy food and living
The mouth watering aroma of a cottage pie, straight from the oven is a great welcome home - a comfort of real food! The simple filling makes use of cheaper cuts of beef and is bulked out with kitchen staples like carrots, celery and onions. We've used our popular cauliflower mash instead of starchy potatoes for low carb comfort.
Quinoa Instant Porridge | HEMSLEY + HEMSLEY - healthy food and living
We like quinoa because it’s protein-rich and gluten-free, plus this porridge contains some of our favourite nourishing ingredients, such as coconut and goji berries. Make a batch during your Sunday Cook-Off and keep it refrigerated in a glass jar at work or at home for an instant breakfast. It's also great for when you travel; just make it up in a mug by simply adding hot water from your hotel room kettle!
French Apple Tart | HEMSLEY + HEMSLEY - healthy food and living
This very tasty French apple tart is simple to make, but impressive to look at. Don’t bother peeling the apples because the skin is full of nutrients - so less work and a splash of extra colour! Figs, pears, plums and quinces are also good. Our gluten-free pastry is a combination of ground almonds and coconut flour, with proper butter for a sweet butter crust.
Gazpacho | HEMSLEY + HEMSLEY - healthy food and living
Great for a hot day when making a lunch that takes just a few minutes is exactly what you want. In our version of this Andalusian peasant dish we leave out the soaked bread and instead use a creamy avocado to give it substance. Eating some of your food raw every day is important as the vitamins are retained as well as the all-important enzymes.
Super Simple Fish Fingers | HEMSLEY + HEMSLEY - healthy food and living
Fish fingers are the ultimate childhood comfort food. We like to eat them in a Flaxseed Bun with a dollop of Homemade Sriracha or Ketchup. We like to use a firm white fish and play with the flavours each time. Rosemary, dill and tarragon go supremely well with fish – use dried or chop up fresh and mix into the ground almond mix. From our bestselling second cookbook Good + Simple, which includes recipes from the Channel 4 series Eating Well with Hemsley + Hemsley.
Blueberry Pancakes With Cashew Mango Cream | HEMSLEY + HEMSLEY - healthy food and living
Our version of America's classic breakfast - blueberry pancakes. Unlike the usual pancake recipes this is grain-free, gluten-free, dairy-free and sugar-free! A couple of tips: don't have too much fat in the pan - it should be lightly coated - and secondly, these coconut flour pancakes work best on a medium heat - remember there is no gluten to hold these bad boys together so go gentle on the cooking. We also serve this beauty at our Hemsley Café at Selfridges.
Apple and Raisin Quinoa Slices | HEMSLEY + HEMSLEY - healthy food and living
Many "multiseed" granola-style snacks are loaded with sugar. Here we use a mixture of grated carrot, apple, raisins and a touch of maple syrup to turn the usually savoury quinoa into a slightly sweet "flapjack-style" slice, while keeping the sugar at a low level. Be sure to cook it in the correct sized tin, otherwise the slice will be very moist. We keep it in the fridge, it's even better the next day. If you like, add your favourite nuts and cacao nibs into this recipe.
