I know it's summer, and roasted vegetables are probably more "appropriate" for fall, but after making the roasted cabbage slices (click here for that recipe!), I just had to try roasting something else! I had some small zucchini and carrots on hand, and decided to give it a go. They were a hit! The zucchini was soft and full of flavor, and the carrots were melt-in-your-mouth delicious. The carrots taste similar to sweet potato fries, but are even better. My hubby doesn't like cooked carrots…
