Made 9/17/19: Doubled recipe. Used cucumbers. Cut sugar in half. Used 1/4 C. sugar and 1/4 C. mix of stevia, erythritol & monk fruit. Added 2 tsp mustard seeds. Did not have celery salt, so used half celery seeds with half canning salt (1 tsp of each). Used half white vinegar and half acv. Did not use clearjel. Added 1/2 tsp xanthan gum. Waterbath for 15 minutes. Made 7 pints.
