[芋圆香芋西米露] Taro & Tapioca Pearl Dessert [芋圓] 材料: 芋頭 300公克 蕃薯粉 120公克 太白粉 30公克 水 120cc 調味料: 白砂糖 3大匙 作法: 1.將芋頭扯底清洗乾淨後去皮。 2.切成薄片,越薄越好。 3.將步驟2鋪於盤中攤開,放入蒸籠以大火蒸20分鐘後取出備用。 4.將步驟3放入容器中搗碎,加入糖、蕃薯粉、太白粉拌勻,再慢慢加入水。 5.將步驟4搓揉均勻成糰至不黏手。 6.再揉成適當大小的圓形長條。 7.最後再切成約1.5公分寬的小塊狀備用。 8.將步驟7放入滾水中以中火煮約3~5分鐘,當芋圓浮於水面上再煮約1分鐘後,撈出瀝乾即可。 [椰汁芋頭西米露] 材料: 芋頭 l個 ( 約 600g) 西米 140g 清水 2.5L 砂糖 50g (用來煮西米的) 冰糖 190g 椰汁 200g (可隨個人喜好加減) 做法: 1. 首先用小鍋煲滾600g熱水和50g砂糖,然後加入西米用細火煲10分鐘再焗15分鐘,氽水過冰水,用少許清水浸住備用。…

[香芋油饭] Yam Rice 材料: 白米 4杯(浸泡半小时) 芋头 350g 香菇 10朵(切粒) 虾米 3大匙 五花肉 1小碗(切丝) 蒜米 2汤匙(切末) 葱头 3汤匙(切片,爆香,备用) 调味料: 盐 1茶匙 酱油 5汤匙 黑酱油 2汤匙 鱼露 1茶匙 蚝油 1茶匙 做法: 1. 锅內热油,放入虾米、蒜米、香菇爆香,再放入五花肉炒到肉变色。 2. 放入芋头一起翻炒 3. 放入浸泡好的米,加入调味料,炒过醬油的米粒顏色漂亮,不過不要翻炒過久,否则容易黏锅烧焦。 4. 最后將炒过的米倒入饭锅內锅,大致拌勻整平。 5. 加入水,水大概淹过就可以了。 6. 放入饭锅內,按下烹煮鍵即成。 6. 饭熟了,加入葱头搅拌,再焖10分钟,完成~ 丰盛餐食组合 | 香芋菜系 | Home
