Bacon Ranch Pea Salad
This easy salad came about in an attempt to satisfy my son who loves peas and my husband who doesn't. It has become a huge hit. You may want to double the recipe if you want any leftovers!
BIKINI FIT LUNCH: Black-eyed Pea Salad 2 cans black-eyed peas, 1 diced tomato, 1/2 diced red onion, 1 small or 1/2 large red, yellow, or orange bell pepper, 1 jalapeno,4 green onions, 1/3 cup cilantro, 1/4 cup rice wine vinegar (unseasoned), 2 Tbsp. canola oil, 1/2 tsp. organic cane sugar, salt and freshly ground black pepper. Bean dishes are a good substitute for meat dishes when trying to get fit!
Pea Salad....seriously saw this at church homecomings too. 1 (20 oz.) package frozen peas (I used a 24 oz. package ~ I couldn't find a 20 oz.) 1 c. chopped celery 1/4 c. chopped green onions (I just put in the whole bunch of green onions, chopped) 2 hard-cooked eggs, chopped 1 c. shredded cheddar cheese 1 (2 oz.) jar pimentos, drained 1/2 c. mayonnaise 3 T. sweet pickle relish 1 tsp. sugar 1 tsp. ground mustard 1 tsp. seasoned salt (I used regular salt)
