Pecans work well also. 🍐 Crisp Pear and Candied Walnut Salad 🍐 INGREDIENTS 120g salad leaves ( I’ve used a mix of rocket for bitterness, baby spinach and oak lettuce) 2 large firm, crunchy pears Lemon juice 120g marinated goats cheese or danish feta Pomegranate seeds (or dried cranberries) Candied walnuts (can use store bought): 1 cup walnuts 1/4 cup brown sugar 20g butter 1/2 teaspoon ground cinnamon Sprinkle of salt Dijon dressing: 1/4 cup extra virgin olive oil 2 tablespoons lemon juice 3 teaspoons Dijon mustard 1 teaspoon honey Salt and pepper METHOD: 1. Add baking paper to a tray and set aside. 2. Add walnuts to a frypan with brown sugar, butter, cinnamon and a pinch of salt. 3. Heat on medium and stir often to fully dissolve the sugar and coat the nuts. This will take about 5-7mins. 4. Remove nuts and immediately spread them out to separate them on the tray and allow to cool. 5. Thinly slice pears and squeeze some lemon juice over them to prevent browning. 6. Add salad leaves to your serving bowl. 7. Add sliced pears, pomegranate seeds, candied walnuts and marinated goats cheese/feta. 8. Make Dijon dressing by combining all ingredients in a jar and shaking until well combined. Taste and adjust salt/pepper to your tastes. 9. Dress salad to your liking just before serving. Unroll the second puff pastry sheet and place on top of the first one. ✨Use a star-shaped cookie cutter to cut out a star from one corner of the layered pastry and set aside. Cut the remaining layered pastry into the shape of a Christmas tree (triangle) with a wide base. Pull away the excess pastry. ✨Cut branches into the sides of the triangle, approximately 2cm wide. Leave the top 5cm as this will be covered with the pastry star. ✨Starting at the top, twist each branch away from you, giving two turns to each branch. ✨Place the pastry star on top of the tree, securing with a little beaten egg. Brush the star and tree with beaten egg. ✨Bake for 12-15 minutes, or until risen and golden brown. Cool for a few minutes before carefully transferring to a wire rack to cool. Transfer to a serving plate or board and dust with icing sugar to serve.
