I love gluten…but gluten, sadly, does not love me. Over 10 years ago, I found out I have a gluten allergy. Before eating even a little would give me a headache that'd last 3 days (exactly) and make my tummy hurt. Being off gluten for so long doesn't have the same disastrous consequences but it definitely still affects me. My doctor told me about Gluten Ease when I was first diagnosed. A root beer float, but make it healthy! 🍻 I use Zevia Root Beer to add allll the root beer flavor, with none of the sugar. I promise you won’t even be able to tell the difference between this and an old-fashioned float! (This one might be even better if I do say so myself). You can also use sugar free ice cream as well...or for a little treat...go all out old fashioned vanilla.
Healthy lunches hard to figure out? Since I'm not able to meal prep like I used to (since our "kitchen" is now our laundry room), I've struggled with finding quick & healthy lunches. One solution I've been loving is buying a rotisserie chicken and shredding it. Then I buy those bags of pre-made salads (with the dressing & toppings) and add a little shredded chicken to the top. Super easy and at least I get some green roughage. The other option I'm trying is to go to Whole Foods and fill up one

I will say I 1| used a pre-made gluten free crust 2| added coconut whipped cream AND made it dairy free (sub full fat coconut milk for heavy cream, the cream powder I had was actually dairy free & I used vegan butter). This pie is made in under 10 minutes. I had my mixer packed (thanks home reno), so I used my Vitamix. I will say that I had to leave it in longer than she called for in the recipe.

Let me put you on to my new favorite kiwi cucumber smoothie from @flouronmyface. 🥒🥝 2 whole kiwi, peeled 1 banana 1 med cucumber, deseeded 1 cup spinach leaves 1/2 granny smith apple, seeded & peeled 1/2 whole pear, cored & peeled 1 1/2 cups ice cubes 2 tsp sweetener of choice, if needed (I didn't add any) Blend in Vitamix or other high-powered blender. Serves 2.
2 Tilapia Salt Black Pepper 5 tbsp butter, melted 2 cloves garlic, minced pinch of red pepper flakes Juice & zest from 1/2 lemon 1 lemon, sliced in rounds Chopped parsley for garnish Broccolini (optional) Season tilapia with salt and pepper. Place on parchment lined toaster oven sheet. Mix together butter, garlic, red pepper flakes, lemon juice and zest. Add broccolini to the pan with the tilapia, if you'd like. Pour the butter mixture over the tilapia & broccolini. Bake at 400 for 10 minutes

This drink is a perfect poolside one 😍A *healthy* frozen margarita ( or smoothie if you make it a virgin! ) You can swap out the frozen fruits for whatever if your favorite! ⠀⠀⠀ Recipe: 1/2 cup frozen pineapple 1/2 cup frozen mango 1 tbs freshly squeezed lime juice 3/4 cup - 1 cup coconut water 1-2 tsp maple syrup, agave or I used sugar free, keto syrup 1 oz (or more to preference) tequilla Mix all ingredients in a Vitamix or high-powered blender. Enjoy!
Sugar Free Lemonade - to freshen up your new year! Here's a sugar free version that's just as delicious. 1.5 cups monk fruit sweetener 4.5 cups filtered water 1.5 cups freshly squeezed lemons (8-10 lemons) Heat the monk fruit and 1.5 cups water in a pan until the monk fruit dissolves. Mix the remaining water with the lemon juice. Add your "simple sugar water" to the lemon water mix until you've reached your desired sweetness.
I have been making this yummy chilli all year long, but it's even better in this cool winter weather!⠀ 1/2 onion, chopped 2 garlic, minced 1 tbs oil 1.25 lb ground beef 2 cans diced tomatoes (14.5 oz) 2 cans chili beans (15.5 oz) 2 cans red kidney beans (15.5oz) 1 can tomato sauce (8oz) 2 tbs cumin 2 tbs chili powder 2 tbs brown sugar 1 tbs garlic powder 1 tsp salt (or more to taste)

RECIPE: 2 cups nonfat plain yogurt 1/4 cup agave/honey/maple syrup (I used maple syrup) 1/2 tsp vanilla Pinch of salt Dried Cranberries Pistachios White Chocolate Chips (alternate) Mix together the yogurt, sweetener of choice, vanilla & salt. 1/2 Apple (honeycrisp or fuji), peeled and diced into cubes 1/4 tsp cinnamon 1 tsp maple syrup 2 tbs walnuts, chopped 1 tsp almond flour 1 tbs oats (not quick cooking) 1 tbs coconut sugar 1/8 tsp cinnamon 1/2 tbs butter, softened Mix apples, 1/4 tsp cinnamon and maple syrup together and place in a ramekin. Next mix together the dry ingredients from walnuts to cinnamon. Cut in the butter until it crumbles. Add to the top of the apples. Microwave for 3 minutes. Top with ice cream or whip cream!
