Bacon Lover's Cacio e Pepe
Cacio e pepe is one of the four classic Roman pastas, but we gave it a Southern spin by folding in smoky bacon (Benton’s is a great option, if you can find it). The silky, peppery cheese sauce coats the bouncy noodles perfectly. Salty, funky pecorino is the main flavor in this dish, but we also fold in a little Parmesan, which is not traditional but helps round out the sharpness and adds a nutty note.
