Ingredients:
2lbs Brussels Sprouts, cut in half, tossed in olive and roasted at 425F for 15-20 minutes.
Crunch:
3/4 cup sliced almonds, 1/4 Quinoa, 1/2 Tbsp olive oil, 1/4 tsp salt. Toast lightly in a pan stove top.
Topping:
- •1 minced shallot, 4-6 vin and oil soaked Calabrian chilis (link in bio, under Amazon store), 3 chopped scallions, 1 cup of chopped parsley, 2 Tbsp olive oil, 1 Tbsp sherry vin, 2 ounces ricotta salata + toasted almond mix.
