Ingredients: Jowar flour (sorghum flour) – 1 cup (120g) Whole wheat flour – ½ cup (60g) (for better structure, or replace with more jowar for 100% GF) Baking soda – ½ tsp Baking powder – 1 tsp Cinnamon powder – ½ tsp Salt – a pinch Grated apple – 1 cup (100g) (about 1 large apple, peeled & grated) Jaggery powder or brown sugar – 1/2 cup (100g) Neutral oil – ⅓ cup (80 ml) Thick curd or plant-based yogurt – ½ cup (120g) Milk or plant milk – ¼ cup (60 ml) Vanilla extract – 1 tsp Lemon juice or vinegar – 1 tsp (for reacting with baking soda) Optional Add-ins: Chopped walnuts / cashews / raisins – ¼ cup Extra cinnamon or nutmeg for spice Apple slices or chopped apple for topping Instructions: Preheat oven to 170°C (340°F). Grease or line your 8×8-inch square pan with parchment. In a large bowl, sift together: Jowar flour Wheat flour Baking soda, baking powder Cinnamon, and salt In another bowl, whisk: Jaggery + curd + oil + vanilla Add lemon juice and milk, mix well.
