Ingredients:
2 peaches 
2 1/2 tbsp coconut sugar 
1/4 tsp cinnamon 
1/2 cup almond flour 
2 tbsp applesauce 

Instructions:
Slice the peaches 
Add to 2 small greased ramekins 
Sprinkle with 1/2 tbsp coconut sugar + 1/4 tsp cinnamon 
Bake at 400F for 15 minutes 
In a bowl, mix together the almond flour, applesauce, & remaining coconut sugar 
Mix until a crumble forms
Remove the peaches from the oven & sprinkle the flour mixture on top 
Bake for 7-8 more minutes

Not to be dramatic or anything, but this is the best thing that’s ever happened to me? My Cashew Cardamom Ice Cream is creamy, luscious and specked with cardamom — yet completely dairy-free, au revoir lactaid. The bars are stuffed with chewy medjool dates (the only dates I trust), and then are topped with a smooth layer of melted chocolate 

Cardamom is very prevalent in Indian food both in sweet & savory applications. It’s been on my mind recently since a lot of the pastries I ate in Copenhagen also feature cardamom. It gives this spicy, fruity flavor that complements the ice cream & dates nicely
