Korean Soft Tofu Stew (Sundubu Jjigae)
This Vegan Sundubu Jjigae (which literally translates to ‘soft tofu stew’) is one of my favourite Korean dishes. It has a light yet really rich and flavourful base with a kick of spice from gochugaru. This is so comforting and perfect for warm and hearty meals with a bowl of steamed short grain rice and some banchan (or side dishes) like kimchi and kongnamul.
Miso Udon Noodle Soup with Teriyaki Mushrooms
A comforting Miso Udon Noodle Soup with a rich broth topped with Teriyaki Mushrooms. The broth is packed with umami and gets a nice richness from the mix of soy milk, miso, mushroom broth, and some vegan butter. Serve this with other toppings of choice. I finished my bowl with Japanese chili oil or layu for an extra kick of heat. This recipe can be easily cooked in one pot by preparing the noodles and toppings before cooking down the broth.

This cucumber and seaweed salad is incredibly easy, light and refreshing. It’s inspired by Japanese Sunomono, or vinegar-based dishes, that I love to have as starters or side dishes in Japanese restaurants. I usually love to get a wakame (seaweed) sunomono or cucumber sunomono but for this version, I wanted to fuse the two together.
