Roasted Carrots and Whipped Feta Side Dish
Roasted Carrots with Whipped Feta Roasted Carrot: -1 bag large carrots, peeled Marinade: 1/4 cup olive oil 3 tbsp warmed honey Garlic powder or 1 clove garlic minced 1 tbsp fresh thyme Topping after baking: Pistachios + Pomegranate Seeds 1. Preheat oven to 400 2. Peel carrots and mix together marinade 3. Pour over carrots until well coated 4. Bake carrots for 25-30 minutes 5. While that’s cooking make whipped feta below 6. Layer dish with whipped feta 7. Top with carrots, crushed pistachios, and pomegranate seeds Whipped Feta: 8oz feta cheese 3 tbsp olive oil Juice from 1 lemon (My cottage cheese girlies wanting to add in some protein to this can add 1/4 cup cottage cheese too)
Cucumber Edamame Salad
Cucumber Edamame Salad This salad will be on repeat because it’s so easy but so good. We served it with soup dumplings on top for dinner but it would be really good as a side dish for potstickers too. 3/4 large English cucumber • 1.5 cups shelled edamame • 1 large avocado • 1/2 tbsp chili crunch @momofukugoods 1/4 cup soyaki (from Trader Joe’s) If you don’t have a Trader Joe’s near you make your own soyaki by mixing together 1/4 cup teriyaki sauce with 1/4 cup soy sauce and 1 tbsp honey.
High Protein Avocado Toast
HIGH PROTEIN AVO TOAST I feel like I’ve been on a weird snack game kick and this one is part of it. I would mix the avo with the cottage cheese to make it more flavorful but kept them separate for the video. Toasted Sourdough • Cottage Cheese (my fav @good_culture ) • Avocado • Red Pepper Flakes • Hot Honey
High Protein Snack: Cottage Cheese Pizza Toast
HIGH PROTEIN SNACK Alright you guys know my love for cottage cheese. This snack is trending on tik tok but I added my own twist with some truffle oil! Try it out. It tastes like pizza but is packed with protein. 1/2 cup cottage cheese, I used @good_culture • Sourdough • Marinara Sauce of choice (I used @bornsimplefoods ) • Sun Dried Tomatoes in oil Truffle Oil -Toast sourdough • -Top with marinara sauce • -Top with cottage cheese, Sundried tomatoes, and truffle oil • -Enjoy!
Tofu Spring Rolls (gluten, dairy free, and vegetarian)
TOFU SPRING ROLLS -Tofu: pressed, seasoned with salt and pepper, and seared in a pan with coconut aminos or soy sauce • -Purple cabbage • -Cilantro • -Spring Roll Paper • -Shredded Carrots • -Avocado -Lettuce Peanut Sauce: • Mix together the following • 1/4 cup warmed peanut butter or tahini • 1/4 cup water • 3 tbsp coconut aminos or soy sauce • 1 tbsp sesame oil • 1 tbsp rice vinegar • 1 Tsp garlic 1/2 tsp sriracha 1. Season tofu and sear in a pan on each side until browned • 2. Get spring roll wet and place on table • 3. Layer roll with tofu, avocado, purple cabbage, carrots, cilantro, and lettuce • 4. Fold roll up • 5. Create as many more rolls as you would like repeating the steps above • 6. Mix together peanut sauce and serve with rolls

GINGER TURMERIC WELLNESS SHOTS These help boost your immune system and are a lot less expensive to make on your own. In honor of school sickness finally hitting me I figured this was a good time to share. Blend the following in a blender: • 1 cup pineapple • 1 apple, cut into smaller pieces • 1 lemon, peeled • 2 inches fresh ginger • 2 inches fresh turmeric (you can use ground Turmeric if you can’t find fresh Turmeric stock) 1 cup coconut water Strain into a cup (the straining takes foreverrrrr so be patient) and store in fridge for one week. Taking in shot portions throughout.
Blender Banana Bread
BLENDER BANANA BREAD Blend together the following: • 2 ripe bananas • 1/4 cup maple syrup • 2 eggs • 2 cups oats • 1 tsp baking powder 1/4 cup peanut butter (can be omitted if you have a peanut allergy add one more banana if you omit) -Once blended fully add to a parchment paper covered bread pan • -Top with chocolate chips (measure with your heart) • -Bake at 350 for 35 minutes
Buffalo cauliflower
BUFFALO CAULIFLOWER *Gluten& Dairy Free* • -1 head of cauliflower cut into small florets • -1 cup almond flour • -Paprika • -Onion powder • -Garlic powder • -Salt&Pepper -1 cup Buffalo sauce of choice I used @primalkitchenfoods 1. Cut cauliflower in to florets • 2. Top with 1/2 cup Buffalo sauce until coated • 3. Mix together almond flour and seasonings • 4. Coat each piece of Buffalo sauce covered cauliflower • 5. Once coated in almond flour mixture air fry at 350 for 20 minutes • 6. Once cooked top with the rest of Buffalo sauce and serve

BURRATA TOMATO APPETIZER This is the easiest appetizer. It somehow feels light even though your eating a lot of cheese. Does anyone else feel that way with burrata or just me 😂 Burrata • Heirloom Tomatoes • Basil • Salt • Pepper • Olive Oil • Balsamic Glaze

PEACH TOAST Sourdough, toasted in a sauce pan with coconut oil • Topped with: • Ricotta Cheese • Hemp Seeds • Peach • Honey
Homemade Red Pepper Hummus
HOMEMADE RED PEPPER HUMMUS 1 can chickpeas (drained and rinsed) • 1/4 cup roasted red peppers • 1/4 cup tahini • 1/4 cup olive oil • 2 tbsp lemon juice • Garlic powder or a garlic clove • Salt • Pepper Paprika Add together ingredients above and blend. You can always add some water or more olive oil if the hummus is too thick for you. Garnish with red pepper, feta, and pepper • Serve with pita chips!
