What's cooking on Prego today? Cured mackerel fillet , citrus & fennel salad, grapefruit emulsion. We wanted to create a fresh and perfect summer dish, using local produce. The Spanish mackerel (Tenggiri) is easily available, and we decided to cure for 12hrs with salt and sugar, fennel seeds and dill, this actually “cooks” the fish. Then we combine pomelo, lime, orange and lemon with fresh fennel shavings and create this lovely salad. Stay tuned, we will reveal it tomorrow! #pregobali
